  • 2 boneless chicken breasts
  • salt to taste
  • black pepper to taste
  • grated parmesan to taste
  • 1 cup basil pesto
  • 3/4 pounds gemelli or penne pasta
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1/2 cup chicken broth


  1. Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a large skillet over medium-high heat. Put the chicken into the skillet and cook for about 4 minutes per side, until both sides are golden. Pour broth into the skillet and cook for another 2 to 5 minutes.
  2. Allow chicken to cool. In a large pot of salted boiling water, cook the pasta according to the package’s instructions, until al dente.
  3. In the pot, add tomatoes, a 1/4 teaspoon salt, and some pepper. Once the tomatoes cook slightly, return the chicken and the pasta to the pot and add the pesto, vinegar, and 1/4 teaspoon salt, and 1/4 teaspoon pepper. Sprinkle parmesan before serving.
