Ingredients:
- 2 boneless chicken breasts
- salt to taste
- black pepper to taste
- grated parmesan to taste
- 1 cup basil pesto
- 3/4 pounds gemelli or penne pasta
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 1/2 cup chicken broth
Instructions
- Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a large skillet over medium-high heat. Put the chicken into the skillet and cook for about 4 minutes per side, until both sides are golden. Pour broth into the skillet and cook for another 2 to 5 minutes.
