This Anchovy Pasta Will Become Your Favorite Meal

No food in the fridge? Make this delicious anchovy pasta using only cupboard ingredients. Umami, flavorful, and oh-so-satisfying, this simple pasta dish for two is so much more than the sum of its parts.

If you’re feeling creative, you can add fresh cherry tomatoes, tinned artichokes, black olives, some fresh torn basil, or chopped parsley to your pasta. However, it’s also perfect just as it is!

Ingredients:

  • 2 cups dried pasta (enough for 2 people)
  • ½ teaspoon chili flakes 
  • 1 tin of anchovies in olive oil
  • 3 cloves garlic, crushed 
  • 2 tablespoons tomato paste 
  • ½ cup parmesan, finely grated

Instructions:

  1. Bring a large pot of well-salted water to a rolling boil and cook the pasta according to the package instructions.
  2. Meanwhile, heat a large frying pan over a medium flame until warm.
  3. Add the entire contents of the tin of anchovies, including the oil, to the pan.
  4. Cook for 2 minutes, stirring regularly, until the anchovies start to break down.
  5. Add the garlic and chili flakes and cook until aromatic.
  6. Add the tomato paste and a ladle of the pasta cooking water and cook for a further 5 minutes, stirring regularly. Add more pasta water as needed to loosen the sauce as it cooks.
  7. Once it is cooked to your taste, drain the pasta and add it to the frying pan.
  8. Turn off the heat, add the parmesan and mix well to ensure all the pasta is coated in the sauce.
  9. Serve with extra parmesan on top and a fresh green salad on the side. Enjoy!
