Broccoli is a great vegetable to buy, because it is one where you can use the whole item. A lot of people don’t know this, but the stalk of the broccoli is completely edible, even though people usually only use the florets. While it can be a little tougher, if you cook it for a while, pickle it, or put it into soups, you can absolutely eat the stalk!

Carrots

Carrots are another affordable vegetable, and you can use them in so many ways. You can prepare them on the stove, roasted in the oven, or simply eaten raw.

Also, if you buy them with the tops on them, you can also eat the leaves so there’s no waste! Use them in a salad, pureed as a sauce or dressing, and you’re really getting your money’s worth.
