These Super Sweet Cookie Dough Balls Require No Baking

You know that feeling when you have unexpected guests coming over in an hour or two, and nothing to serve on the table? If they happen to like sweet treats, cookie dough balls will be up to their taste—and they require no baking!

This delicious recipe was shared by food blogger Amy Lanza of Nourishing Amy, and it’s 100% vegan. She also made this recipe gluten-free by replacing white flour with oat flour, but you can skip this step if it feels unnecessary.

Ingredients:

  • 70g oats
  • 60g ground almonds
  • 100g runny tahini, cashew or almond butter
  • 60g maple syrup
  • 15g coconut oil, melted
  • 1 tsp vanilla or almond essence
  • a pinch of salt
  • 50g chocolate chips

Instructions:

  1. In order to avoid using white flour, blend the oats until they form oat flour and put it inside a large bowl.
  2. Add ground almonds, tahini or nut butter, maple syrup, melted coconut oil, vanilla or almond essence, and a pinch of salt to a bowl with oat flour. Stir the ingredients together until a dough is formed and fold in the chocolate chips.
  3. After dividing the dough into twelve pieces, roll each one into cookie dough balls. Place the balls inside the fridge for 30-60 minutes on a parchment-lined tray before eating them.
