These Seasoned Fries are Great if You Have Lots of Guests to Cook For

If you’re hosting a dinner party, you may want dishes that are quite refined to bring out to impress your guests. However, if you’re hosting a large event where there will be lots of hungry guests, sometimes the most important thing isn’t that your food looks beautiful and impressive, but that there’s enough to go around to keep everyone happy. Enter, these seasoned fries—tasty, satisfying, and healthier than traditional fries, these are perfect alongside any kind of cooked fish or meat, as a starter, or even as the main event themselves—although if you’re serving them as a main, you may want to consider loading them with cheese, fried vegetables or other toppings.

Ingredients (to serve 12):

  • 11 cups of white potatoes, scrubbed and peeled of any marks and blemishes
  • 10 fl ounces of vegetable oil
  • Paper towels, for soaking up excess oil
  • 2 teaspoons of salt
  • 2 teaspoons of garlic granules
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of oregano

Instructions:

  1. Mix all of the seasonings together.
  2. Slice the potatoes into rounds about half an inch thick. Try to make sure the slices are about the same size.
  3. Bring a pan of water to a boil, and boil the potato slices for 7 minutes.
  4. Drain the water from the pan, and leave the potatoes to steam off excess water for 1-2 minutes.
  5. In a large frying pan, heat 1/4 of the total amount of oil.
  6. Add 1/4 of the total amount of potato slices to the hot oil, making sure each slice is in contact with the oil.
  7. Fry for 1-2 minutes, and then sprinkle 1/4 of the total amount of seasoning over the potatoes.
  8. Fry for a further 4 – 5 minutes, and then flip the slices over using a fork or a spatula. Fry for a further 3-4 minutes.
  9. Carefully remove the slices from the pan, trying not to tip out too much of the oil. Place them on a plate or board lined with paper towels.
  10. Fry the remainder of the potato in batches, ensuring that every slice comes into contact with the oil to create a crispy finish.
  11. To serve the fries, heat them in a low oven for 10 minutes.
