These Potato Croquettes are the Perfect Way to Use Up Instant Mashed Potatoes!

Instant mashed potatoes are great to have in the house for last-minute meals, especially when you’re not feeling well enough to make mash potatoes from scratch. However, they’re really not that tasty, and you can find yourself with multiple packets in your pantry and nothing to do; until now!

These potato croquettes are super easy to make and will turn your instant mash into something amazing.

Recipe

  1. First, follow the directions and make 2 cups worth of mashed potatoes, and then let them cool so you can handle them.
  2. Beat two eggs in a bowl, add some flour with a bit of salt into another bowl, and breadcrumbs into a third. This will be the dredging station so the croquettes get nice and crispy.
  3. Once the mashed potatoes have cooled, take about 1 tablespoon worth of them and roll it into a ball. Use your finger to make an indent and then put a little bit of cheese inside them if you like, and then close it up.
  4. Dip the ball into the flour, then the egg, then finally the breadcrumbs.
  5. Put the balls on a baking sheet when they’re done, and then bake them in a 450 F oven for 8-10 minutes until they’ve browned.
