These Healthy Cookies are Delicious and Nutritious

Baking cookies is a great weekend activity and the end product is absolutely delicious. They can be quite high in sugar and saturated fats, however. This recipe for healthy cookies guarantees the same great flavor whilst also being very nutritious!

Ingredients:

  • 2 ripe bananas
  • 1/3 cup of peanut butter
  • 1/4 cup of honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 cups of oats
  • 1/2 cup of dark chocolate chips or dried fruit (optional)
  • 1/4 cup of chopped nuts
  • Salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with baking paper.
  2. In a large bowl, combine your mashed bananas, peanut butter, honey or maple syrup, vanilla extract, and cinnamon. Mix until smooth and well combined. Add your oats to the wet ingredients, stirring until the mixture forms a consistent cookie dough. If you like, you can fold in dark chocolate chips or dried fruit and chopped nuts for added texture and flavor.
  3. Scoop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them evenly. Gently flatten each cookie with the back of a spoon or your fingers, as these cookies won’t spread much during baking. Sprinkle a pinch of salt over the cookies if you want a savory tone to your cookies.
  4. Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to finish cooling.
