These Cookies Are Eggless, Dairy-Free, and Super Easy to Make!

These cookies named the poor man’s cookie, were invented in the 1930s out of sheer necessity and a real lack of baking ingredients like butter and milk. Though these cookies have a few strange swaps, the cookies still turn out really delicious and are definitely worth making!

Ingredients

  • 1 cup of shortening, vegetable or regular
  • 1 cup of packed brown sugar
  • 1/2 cup of white sugar
  • 1/4 cup of water
  • 1 teaspoon of vanilla extract
  • 1 cup of flour
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 2 cups of oats

Recipe

  1. First, pre-heat your oven to 350 F and put the two sugars and shortening of your choice into a bowl of a stand mixer, or a regular bowl if you are using a hand mixer.
  2. Cream everything together until light in color, and then add in the vanilla extract and water.
  3. In a separate bowl, add in the flour, baking soda, and salt together, before slowly adding the dry mixture into the wet. You want the mixture to be just combined and not overworked, so do this step carefully.
  4. Once the flour mixture is incorporated, add in the oats by hand just to get them throughout the cookie.
  5. Scoop out the cookies onto a sheet pan, and bake for 10-12 minutes or until they’re golden brown.
  6. Cool and enjoy!
