These Coconut Lime Popsicles are the Secret to Keeping Cool

Rumor has it that fall is just around the corner, but it still seems pretty hot to us.

So, to celebrate the warm weather and make sure you don’t overheat, popsicles are the way to go.

Plus, you can sing that song about lime and coconut which never leaves your head!


• 1 can coconut milk
• ¼ cup milk
• ¼ cup lime juice, fresh squeezed
• 1 tbsp lime zest
• ¼ cup unsweetened shredded coconut
• 1 drop green food coloring (optional)


  1. Combine coconut milk, milk, lime juice, lime zest, and shredded coconut in a blender. If desired, add 1 drop of green food coloring. Blend on high until mixture is well-combined, about 1 minute.
  2. Pour mixture evenly among the 8 popsicle molds and transfer to freezer.
  3. Freeze for 10 minutes. Insert a popsicle stick into each mold and freeze for about 2-3 hours until solid.
