There’s So Much You Can Do With Cabbage

Cabbage is one of the most underrated vegetables, despite having great health benefits such as a high vitamin content, anti-inflammatory qualities, and promoting digestive health. In terms of recipes, it’s mostly known for being part of coleslaw, which is heaped in dressing, or being served boiled, which often means its nutrients as well as flavors, are stripped.

Cabbage actually responds really well to high temperatures and simple seasoning. Try baking or grilling half a head of cabbage in heavy-duty foil with olive oil, garlic, and your favorite savory seasoning wedged between its many layers. Use high temperatures and bake until the cabbage is fully softened.

An upgrade to the traditional boiled cabbage is Colcannon, which is an Irish recipe that is essentially mashed potatoes with cabbage. Add a chopped onion and a couple of cups of chopped cabbage half-way through cooking the potatoes. The cabbage will be tender but not boiled, so it’s still healthy and you will feel the crunch!
