The Perfect Summertime Pie

Summer is one of the best times to harvest fruit from your local garden or community farm. Often times in orchards or even yards with a single tree an overwhelming surplus of produce becomes ripe all at one time.

When all of your apples or berries get ripe at once, you have to start getting creative with what you make with all this fresh fruit, in order to avoid waste. Jams and jellies are great ways to preserve ripe fruit for later. But if you want to enjoy some produce now, the perfect pie for hot summertime days is rhubarb strawberry pie.

Rhubarb is a fairly tart root and so it produces a pie that is a little less overwhelmingly sweet than most desert pies. If you are not as much of a fan of tart you can easily balance the taste with strawberries or blueberries creating a perfect balance of tart and sweet. And on especially hot days the pie is perfect with a scoop of fresh vanilla ice cream on the side.
