Ingredients:

  • 2-3 avocadoes
  • 1 large tomato
  • 1 shallot
  • 1 red chilli
  • 8 sprigs chopped coriander

Instructions:

  1. Chop and deseed the tomato into chunks.
  2. Repeat the process with the chilli, making sure that it is finely sliced.
  3. Remove the skins and the stone of the avocado.
  4. Mash the ripe flesh with a fork until you have a chunky avocado mix.
  5. Stir in the chopped shallot, tomato, and chilli.
  6. Mix in the coriander and season with salt and pepper.
