The Easiest Guacamole to Make

Guacamole is a hugely popular dish. Avocados are a great ingredient, as they provide so much richness and creaminess, but are super healthy. Pairing them with the fresh flavors in this recipe results in a creamy and zingy guac that’s perfect for dipping chips into or layering on top of a bean chili. The lime juice in this stops the avocadoes from going brown, so it can be kept in the fridge for a few days after making. This recipe can be halved or doubled depending on the desired quantity.

Ingredients:

  • 2 large avocados
  • 1 small red onion
  • 1 clove garlic
  • Half a lime 
  • Handful of cherry tomatoes 
  • ½ teaspoon smoked paprika
  • 1 teaspoon extra virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. Chop the onion and garlic into small slices.
  2. Chop the tomatoes into quarters.
  3. Juice the lime and strain out any seeds. 
  4. Slice the avocados in half and destone them.
  5. Scoop the insides into a bowl and mash.
  6. Add the onion, garlic, tomatoes, and lime juice to the mashed avocado and mix through.
  7. Add the extra virgin olive oil, paprika, salt, and pepper and stir well.
