Guacamole is a hugely popular dish. Avocados are a great ingredient, as they provide so much richness and creaminess, but are super healthy. Pairing them with the fresh flavors in this recipe results in a creamy and zingy guac that’s perfect for dipping chips into or layering on top of a bean chili. The lime juice in this stops the avocadoes from going brown, so it can be kept in the fridge for a few days after making. This recipe can be halved or doubled depending on the desired quantity.
Ingredients:
- 2 large avocados
- 1 small red onion
- 1 clove garlic
- Half a lime
- Handful of cherry tomatoes
- ½ teaspoon smoked paprika
- 1 teaspoon extra virgin olive oil
- Salt and pepper, to taste
Instructions:
- Chop the onion and garlic into small slices.
- Chop the tomatoes into quarters.
- Juice the lime and strain out any seeds.
- Slice the avocados in half and destone them.
- Scoop the insides into a bowl and mash.
- Add the onion, garlic, tomatoes, and lime juice to the mashed avocado and mix through.
- Add the extra virgin olive oil, paprika, salt, and pepper and stir well.
