One of the most common concerns for anyone switching to a plant-based diet is how they can replace animal products in their favorite recipes. Eggs, in particular, are found in so many things, it can be difficult to imagine how to get by without them. There are plenty of quality egg replacement products on the market nowadays, and while we love a good “just egg” omelet, you should also know that many dishes can be made with ingredients you already have. These are some of our go-to’s:

Flax Seed

Flax “egg” is a great substitute when baking if you’re looking for a substitute that will provide your dish with structure. When ground and mixed with a little water, grind one tablespoon of flax, mix with two tablespoons of water, and allow to sit for five minutes. This will replace one egg.

Just Egg

One of the first of its kind to hit the market. JUST makes a vegan egg substitute perfect for omelets, scrambles, and frittatas. It’s made from mung beans so it’s high in protein without the cholesterol of an actual egg.

Applesauce

Using applesauce as an egg replacement in baking is a great way to give your desserts a lighter texture with a bit of sweetness. Add ¼ cup of applesauce for every egg you replace.
