Tradition is what holidays are all about, especially when it comes to food. Making something that is festive but not too festive is a real game challenge. Make some specialties you’ve never tried before, and make your own traditions this holiday season.

Roasted Vegetable Quinoa

Take an ungreased baking pan and place vegetables and garlic inside, drizzle them with oil, and add salt and pepper. Bake until tender and mix once. In a large pot, boil a broth, add quinoa and simmer until liquid is absorbed, and mix vegetables with it. Whisk mustard, vinegar, and oil, and your dish is ready.

Carrot Ginger Soup

Heat oil, and cook and stir onion until tender for about 4-5 minutes. Add garlic and ginger, mix carrots, zest broth, salt, and pepper and wait until it boils. Reduce heat until carrots are tender. To get the desired consistency, blend the mixture, and finish it up by adding lemon juice.

Roasted Pumpkin With Rice

Bring water to boil, add rice, and cook for about 20-25 minutes until all water is absorbed. Stuff pumpkin with rice and vegetables by your choice. You can spice it up with cinnamon, or by adding some nuts.
