Save Your Bones
Instead of using broth and stocks, fill your pot with water and toss in rinsed bones. Then cook it down low and slow for 12 to 48 hours. This creates a rich, concentrated base for your soup.
Roast Your Ingredients
Brown your meat and vegetables before adding it to your soup to enrich their flavors. For vegetables, roasting them releases their sugars, caramelizing them and making them sweeter.
Add Acid
Give your soup or stew an edge by adding a drop of acid. This can include citrus juices, tomato paste, wine, coffee, beer, or vinegars.
Go Heavy on Seasonings
