Pumpkin pie and french toast are two things we love, and you can make healthier french toast by using whole-grain bread, cinnamon, pumpkin puree, nutmeg, eggs, and walnuts. Add an extra boost of protein with cottage cheese on top.

Pumpkin french toast that's stuffed with cream cheese! 🎃🍞☁️⁠ ⁠ This warm buttery bread is thick, fluffy, and tastes phenomenal topped with crunchy pecans and maple syrup drizzle. This tasty toast will have you feeling delighted all day. 🍁🍯⁠ ⁠ * INGREDIENTS *⁠ (French Toast)⁠ Half a loaf of Bread (cut into 3in thick slices)⁠ 1 cup Plant-based Milk⁠ 1 tbsp Ground Flax Seed⁠ 0.25 cups Pumpkin Puree⁠ 1 tsp Cinnamon⁠ 1 tsp 'Pumpkin Pie' Spice⁠ 1 tbsp Vanilla⁠ 0.25 cups Pecans⁠ 0.25 cups Maple Syrup⁠ 1 tbsp Canola Oil⁠ 1 tbsp Powdered Sugar (optional)⁠ 4 slices of Plant-based Butter (optional)⁠ 8oz Plant-based Cream Cheese (room temperature)⁠ 1 tbsp vanilla⁠ ⁠ * DIRECTIONS *⁠ 1. Using a small knife, make a slit in the middle (from the bottom of the crust) of each slice of bread to form a pocket.⁠ 2. Add the vanilla to the cream cheese, and mix until combined.⁠ 3. Fill a piping bag with the cream cheese (or use a spoon), and stuff the cream cheese into the pocket of the bread.⁠ 4. In a shallow bowl, combine the pumpkin puree, pumpkin pie spice, cinnamon, vanilla, ground flax seed, and plant-based milk. Whisk until mixed.⁠ 5. Spray/drizzle oil in a medium/large frying pan and heat on a medium flame.⁠ 6. Dunk your stuffed bread in the pumpkin mixture and fry until golden brown, then flip and cook the other side.⁠ 7.
