Ingredients

  • 1 cup salsa verde
  • 1 cup chopped onion
  • 1 cup sour cream
  • 1 ounce taco seasoning mix
  • 1 bag frozen sweet corn (10 ounces)
  • 2 tablespoons olive oil
  • 2 cans mild green chiles
  • 3 cups vegetable or chicken broth
  • 4 cloves garlic
  • 2 cans of white beans

Instructions

  1. Pour olive oil into a large pot and heat over a medium flame. Once boiling, add onions and garlic, stirring constantly until softened after about 4 minutes.
  2. Stir the broth into the pot before adding beans, corn, chiles, taco seasoning, and salsa verde.
  3. Bring the mixture to a boil and reduce the heat to medium-low. Stir the mixture occasionally and cook for another 15 minutes.
  4. Remove from the stove and turn off the heat. Pour sour cream into the mix and serve.

Do you ever get to the middle of the week and start to feel like it might just be easier to get a takeaway or ready meal? It is possible to keep your healthy eating goals on track and have dinner on the table in under half an hour—just check out this super nutritious red lentil soup, which can be made in around twenty minutes!

Ingredients:

  • 3/4 cup of dried red lentils
  • 1 can of coconut milk
  • Half a white onion
  • 3 cloves of garlic
  • 1 thumb sized piece of ginger 
  • 2 tablespoons of oil
  • 1 teaspoon each of: garam masala, grind cumin, ground coriander and ground ginger
  • 1 vegetable stock cube 
  • 1/2 cup of water

Instructions:

  1. Finely dice the onion, slice the garlic cloves and peel and grate the ginger.
  2. Heat the oil in a large saucepan, and then add the onion, garlic and ginger.
  3. Cook for 10 minutes, and then add the ground spices. Stir well and cook for 2 minutes.
  4. Add the red lentils and stir well.
  5. Add the stock cube, cook for 1 minute and then add the water and coconut milk.
  6. Allow the soup to simmer for 10 – 15 minutes, then remove from the heat and serve.

Miso is a fermented soybean paste that serves as a staple in Japanese cooking. Salty, savory, and a little bit nutty, it’s used to add flavor to a wide variety of traditional recipes. One of the most popular, and, dare we say, our favorite, is miso soup, a brothy soup typically prepared with tofu, seaweed, and plenty of green onion. Many restaurants prepare their miso soups with stock made from dried fish, but if you prefer to avoid animal products, you can easily make your own vegan version at home and even add veggies for extra nutrition. Here’s our go-to recipe.

Ingredients:

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 cup silken tofu, cubed
  • 1 cup sliced mushrooms (shiitake, button, or any variety you prefer)
  • 1 cup carrots, shredded
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 sheet nori seaweed, torn into small pieces

Instructions:

  1. Wash and chop the mushrooms, carrots, and green onions.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add garlic and sauté for about 1 minute until fragrant. Add mushrooms and carrots and sauté for an additional 3-5 minutes until the vegetables start to soften.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Reduce heat to low.
  4. Carefully add the tofu to the simmering broth. Allow it to cook for about 3-5 minutes until heated through.
  5. In a small bowl, whisk together the miso paste with a ladle of hot broth until all of the paste is dissolved. Add the miso mixture back to the pot and stir well.
  6. Add soy sauce and sesame oil to the pot, adjusting the seasoning to taste.
  7. Add the green onions and torn pieces of nori and simmer for an additional 2-3 minutes.
  8. Ladle the miso soup into bowls and serve hot. Enjoy!

Craving for some lasagna but would also want a comforting soup? You don’t have to choose anymore since TikTok decided to join the two in a single dish.

In a popular TikTok video, which attracted almost four million views, @yessidothecookingg showed how to make lasagna soup that seems perfect for the upcoming fall and winter seasons.

How to Make Lasagna Soup

To make lasagna soup the way @yessidothecookingg does it, you need to first brown some sausage in a pot. Set it aside and sauté chopped onion, minced garlic, and seasoning. Once done, add tomato sauce, chicken broth, and diced tomatoes before letting it simmer.

Next, add browned sausage, uncooked pasta noodles, heavy cream, ricotta cheese, and mozzarella cheese. Give it all a good mix and leave it on the stove until the pasta is cooked.

Finally, serve it in a bowl with a scoop of ricotta cheese and some basil as a finishing touch.

@yessidothecookingg’s recipe for lasagna soup quickly gained traction on social media and prompted other TikTokers to try it.

“Just made, and it was perfect. Used Rao’s Sensitive Marinara and sub beef broth. Sooo Good!!” @superchic007 wrote in the comments section.

Do you ever get to the middle of the week and start to feel like it might just be easier to get a takeaway or ready meal? It is possible to keep your healthy eating goals on track and have dinner on the table in under half an hour—just check out this super nutritious red lentil soup, which can be made in around twenty minutes!

Ingredients:

  • 3/4 cup of dried red lentils
  • 1 can of coconut milk
  • Half a white onion
  • 3 cloves of garlic
  • 1 thumb sized piece of ginger 
  • 2 tablespoons of oil
  • 1 teaspoon each of: garam masala, grind cumin, ground coriander and ground ginger
  • 1 vegetable stock cube 
  • 1/2 cup of water

Instructions:

  1. Finely dice the onion, slice the garlic cloves and peel and grate the ginger.
  2. Heat the oil in a large saucepan, and then add the onion, garlic and ginger.
  3. Cook for 10 minutes, and then add the ground spices. Stir well and cook for 2 minutes.
  4. Add the red lentils and stir well.
  5. Add the stock cube, cook for 1 minute and then add the water and coconut milk.
  6. Allow the soup to simmer for 10 – 15 minutes, then remove from the heat and serve.

Miso is a fermented soybean paste that serves as a staple in Japanese cooking. Salty, savory, and a little bit nutty, it’s used to add flavor to a wide variety of traditional recipes. One of the most popular, and, dare we say, our favorite, is miso soup, a brothy soup typically prepared with tofu, seaweed, and plenty of green onion. Many restaurants prepare their miso soups with stock made from dried fish, but if you prefer to avoid animal products, you can easily make your own vegan version at home and even add veggies for extra nutrition. Here’s our go-to recipe.

Ingredients:

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 cup silken tofu, cubed
  • 1 cup sliced mushrooms (shiitake, button, or any variety you prefer)
  • 1 cup carrots, shredded
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 sheet nori seaweed, torn into small pieces

Instructions:

  1. Wash and chop the mushrooms, carrots, and green onions.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add garlic and sauté for about 1 minute until fragrant. Add mushrooms and carrots and sauté for an additional 3-5 minutes until the vegetables start to soften.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Reduce heat to low.
  4. Carefully add the tofu to the simmering broth. Allow it to cook for about 3-5 minutes until heated through.
  5. In a small bowl, whisk together the miso paste with a ladle of hot broth until all of the paste is dissolved. Add the miso mixture back to the pot and stir well.
  6. Add soy sauce and sesame oil to the pot, adjusting the seasoning to taste.
  7. Add the green onions and torn pieces of nori and simmer for an additional 2-3 minutes.
  8. Ladle the miso soup into bowls and serve hot. Enjoy!

Craving for some lasagna but would also want a comforting soup? You don’t have to choose anymore since TikTok decided to join the two in a single dish.

In a popular TikTok video, which attracted almost four million views, @yessidothecookingg showed how to make lasagna soup that seems perfect for the upcoming fall and winter seasons.

How to Make Lasagna Soup

To make lasagna soup the way @yessidothecookingg does it, you need to first brown some sausage in a pot. Set it aside and sauté chopped onion, minced garlic, and seasoning. Once done, add tomato sauce, chicken broth, and diced tomatoes before letting it simmer.

Next, add browned sausage, uncooked pasta noodles, heavy cream, ricotta cheese, and mozzarella cheese. Give it all a good mix and leave it on the stove until the pasta is cooked.

Finally, serve it in a bowl with a scoop of ricotta cheese and some basil as a finishing touch.

@yessidothecookingg’s recipe for lasagna soup quickly gained traction on social media and prompted other TikTokers to try it.

“Just made, and it was perfect. Used Rao’s Sensitive Marinara and sub beef broth. Sooo Good!!” @superchic007 wrote in the comments section.
