Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 500g of mixed mushrooms (such as button, cremini, and shiitake), sliced
  • 200g of cooked chestnuts, roughly chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon all-purpose flour
  • 200ml vegetable broth
  • Salt and pepper, to taste
  • 1 sheet of store-bought puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 200°C (400°F). Grease a pie dish or baking dish and set aside. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
  2. Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-6 minutes. Stir in the chopped chestnuts and fresh thyme leaves, and cook for an additional 2 minutes.
  3. Sprinkle the flour over the mushroom mixture and stir well to combine, allowing the flour to cook for 1-2 minutes. Gradually pour in the vegetable broth, stirring constantly, until the mixture thickens into a savory gravy. Season with salt and pepper to taste.
  4. Transfer the mushroom and chestnut filling to the prepared pie dish, spreading it out evenly. Roll out the puff pastry sheet to fit the top of the pie dish. Place the pastry over the filling and trim any excess pastry around the edges. Crimp the edges of the pastry to seal.

  1. In a food processor, combine flour, sugar, and salt. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, pulsing until the dough starts to come together.
  2. Turn the dough onto a floured surface, shape it into a disk, wrap in plastic, and refrigerate for at least 30 minutes. Roll out the chilled dough and fit it into a pie dish. Trim excess and crimp the edges. Prick the bottom with a fork and chill for another 30 minutes.
  3. Preheat the oven to 375°F (190°C). Blind bake the crust with parchment and pie weights for 15 minutes, then remove weights and bake for an additional 10 minutes until golden.
  4. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water, whisking to avoid lumps. Cook the mixture over medium heat, stirring constantly until it thickens.
  5. In a separate bowl, whisk egg yolks. Gradually whisk in some of the hot sugar mixture to temper the eggs. Pour the egg mixture back into the saucepan and cook until it thickens. Remove from heat and stir in lemon zest, lemon juice, and butter. Pour the lemon filling into the baked pie crust.
  6. In a clean, dry bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar, one tablespoon at a time, and continue beating until glossy stiff peaks form. Add vanilla extract and gently fold in.
  7. Spoon the meringue over the lemon filling, making sure it reaches the crust to create a seal. Use the back of a spoon to create peaks on the meringue.
  8. Bake the pie at 350°F (175°C) for about 15 minutes or until the meringue is golden brown. Allow the pie to cool completely before refrigerating for at least 4 hours. Slice and enjoy the tangy sweetness of your homemade lemon meringue pie!

Pie for dessert is a Thanksgiving tradition that can be traced all the way back to the 18th century. It’s always nice to have a sweet treat after a meal, but it seems even more vital in the cold and wintry months. Pie is a delicious, fruit-filled option to have as your sweet course, and once you’ve got the knack of making your own pastry (or rolling out some store-bought), filling the pie is quite simple and easy. Check out these three recipes for pie fillings which are fruit, fun and flavorsome.

Cherry, Pear and Spiced Wine

Ingredients (to serve 8):

  • 3 pears
  • 2/3 cup of fresh or frozen pitted cherries
  • 2 tablespoons of sugar
  • ½ cup of red or rose wine
  • ¼ cup of water
  • 2 teaspoons of ground allspice
  • 2 tablespoons of butter

Instructions:

  1. Heat the wine and water in a pan, adding the ground allspice once the liquid starts to steam. Simmer for 10 minutes, then remove from the heat.
  2. Heat the butter in a pan, and add the sliced pears and cherries. As the fruit softens, add the sugar.
  3. Once the pears are soft, add the wine to the fruit. Simmer for 5 minutes, then remove from the heat.
  4. Allow the mix to cool slightly before filling the pastry. Bake the pie until it is golden on top.

Apple and Cashew Nut Cream

Ingredients (to serve 8):

  • 4 large apples
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • ½ cup of cashew nuts
  • ½ cup of warm water
  • 2 tablespoons of butter
  • 2 tablespoons of sugar
  • 2 tablespoons of maple syrup

Instructions:

  1. Soak the cashew nuts in the warm water for half an hour, then drain.
  2. Slice the apples and add them to a pan along with the cinnamon, nutmeg and sugar. Cook until the apples are soft.
  3. Blitz the soaked cashews with the maple syrup in a food processor (you may need to add a splash of water). Add the nuts to the apples and stir well.
  4. Fill the pie with the mix and bake until the pastry is golden.

Banana, Blueberry and Coconut

Ingredients (to serve 8)

  • 2 ripe bananas
  • 1 cup of blueberries (fresh or frozen)
  • ¼ cup of desiccated coconut
  • 2 tablespoons of sugar

Instructions:

  1. Heat the blueberries in a pan with the sugar. After 5 minutes, add the sliced banana.
  2. Add the desiccated coconut and cook for a further 10 minutes.
  3. Allow the mix to cool before using it to fill the pie.

Serve the pie with cream, custard, or ice cream for a real autumnal treat.

Okay, so shepherd’s pie might be defined as a minced meat pie topped with mashed potato, but just because meat is usually central to this dish doesn’t mean that you can’t create a vegan version. After all, we have veggie burgers and sausages, don’t we? So check out this vegan shepherd’s pie recipe that is just as hearty and yummy as the original, and isn’t even that hard to cook.

Ingredients

  • Potatoes
  • Vegan butter
  • Salt
  • Pepper
  • Olive oil
  • Onion
  • Garlic
  • Tomato paste
  • Lentils
  • Vegetable stock
  • Peas
  • Carrots
  • Green beans
  • Corn
  • Alternatively, a bag of frozen mixed veggies

Directions

Roughly dice your potatoes and place them into a large pot. Fill with water until they’re covered and bring to a boil. Add the salt, cover, and cook until they’re fork-soft.

In the meantime, preheat the oven to 425 degrees F. Grease a large baking dish with oil. Chop your onions and mince your garlic.

Once cooked, drain and mash the potatoes. Add vegan butter and season with salt and pepper. Cover and set aside.

Heat olive oil in a large saucepan over medium heat. Add your garlic and onions and saute for about five minutes. Add tomato paste, salt, and pepper. Add lentils and vegetable stock. Stir and bring to a low boil. Simmer until lentils are cooked through, about 40 minutes. Remove the lid and continue to simmer, stirring frequently, until any excess liquid cooks off.

Add the peas, carrots, green beans, and corn and cook for a final ten minutes.

Put the cooked lentils and veggie mixture into the prepared baking dish. Top with mashed potatoes. Smooth down and season with salt and pepper. Bake for 10 to 15 minutes until golden brown.

Her pies feature fairy tales, TV show characters, seasonal themes, and Disney characters, and all of them are as fabulous as the last, looking more like works of art than baked goods.

Between Alice in Wonderland, Game of Thrones, The Little Mermaid, and Sleeping Beauty her pies are an ode to films, TV shows, and childhood stories.

“I love love love playing with different mediums and materials and liked the idea that pies, by nature, allow you to work with several different layers. Once I started brainstorming design concepts, I also realized they’re a unique medium for storytelling. I love the storytelling aspect and usually focus on creating a sense that the viewer is peeking into a unique edible world,” Joy told Bored Panda.

Follow this simple recipe to create your own mushroom and chestnut pie.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 500g of mixed mushrooms (such as button, cremini, and shiitake), sliced
  • 200g of cooked chestnuts, roughly chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon all-purpose flour
  • 200ml vegetable broth
  • Salt and pepper, to taste
  • 1 sheet of store-bought puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 200°C (400°F). Grease a pie dish or baking dish and set aside. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
  2. Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-6 minutes. Stir in the chopped chestnuts and fresh thyme leaves, and cook for an additional 2 minutes.
  3. Sprinkle the flour over the mushroom mixture and stir well to combine, allowing the flour to cook for 1-2 minutes. Gradually pour in the vegetable broth, stirring constantly, until the mixture thickens into a savory gravy. Season with salt and pepper to taste.
  4. Transfer the mushroom and chestnut filling to the prepared pie dish, spreading it out evenly. Roll out the puff pastry sheet to fit the top of the pie dish. Place the pastry over the filling and trim any excess pastry around the edges. Crimp the edges of the pastry to seal.

Instructions:

  1. In a food processor, combine flour, sugar, and salt. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, pulsing until the dough starts to come together.
  2. Turn the dough onto a floured surface, shape it into a disk, wrap in plastic, and refrigerate for at least 30 minutes. Roll out the chilled dough and fit it into a pie dish. Trim excess and crimp the edges. Prick the bottom with a fork and chill for another 30 minutes.
  3. Preheat the oven to 375°F (190°C). Blind bake the crust with parchment and pie weights for 15 minutes, then remove weights and bake for an additional 10 minutes until golden.
  4. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water, whisking to avoid lumps. Cook the mixture over medium heat, stirring constantly until it thickens.
  5. In a separate bowl, whisk egg yolks. Gradually whisk in some of the hot sugar mixture to temper the eggs. Pour the egg mixture back into the saucepan and cook until it thickens. Remove from heat and stir in lemon zest, lemon juice, and butter. Pour the lemon filling into the baked pie crust.
  6. In a clean, dry bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar, one tablespoon at a time, and continue beating until glossy stiff peaks form. Add vanilla extract and gently fold in.
  7. Spoon the meringue over the lemon filling, making sure it reaches the crust to create a seal. Use the back of a spoon to create peaks on the meringue.
  8. Bake the pie at 350°F (175°C) for about 15 minutes or until the meringue is golden brown. Allow the pie to cool completely before refrigerating for at least 4 hours. Slice and enjoy the tangy sweetness of your homemade lemon meringue pie!

Pie for dessert is a Thanksgiving tradition that can be traced all the way back to the 18th century. With the new season now upon us, it’s time to start planning some warm and comforting meals to see you through the darker evenings. It’s always nice to have a sweet treat after a meal, but it seems even more vital in the cold and wintry months. Pie is a delicious, fruit-filled option to have as your sweet course, and once you’ve got the knack of making your own pastry (or rolling out some store-bought), filling the pie is quite simple and easy. Check out these three recipes for pie fillings which are fruit, fun and flavorsome.

Cherry, Pear and Spiced Wine

Ingredients (to serve 8):

  • 3 pears
  • 2/3 cup of fresh or frozen pitted cherries
  • 2 tablespoons of sugar
  • ½ cup of red or rose wine
  • ¼ cup of water
  • 2 teaspoons of ground allspice
  • 2 tablespoons of butter

Instructions:

  1. Heat the wine and water in a pan, adding the ground allspice once the liquid starts to steam. Simmer for 10 minutes, then remove from the heat.
  2. Heat the butter in a pan, and add the sliced pears and cherries. As the fruit softens, add the sugar.
  3. Once the pears are soft, add the wine to the fruit. Simmer for 5 minutes, then remove from the heat.
  4. Allow the mix to cool slightly before filling the pastry. Bake the pie until it is golden on top.

Apple and Cashew Nut Cream

Ingredients (to serve 8):

  • 4 large apples
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • ½ cup of cashew nuts
  • ½ cup of warm water
  • 2 tablespoons of butter
  • 2 tablespoons of sugar
  • 2 tablespoons of maple syrup

Instructions:

  1. Soak the cashew nuts in the warm water for half an hour, then drain.
  2. Slice the apples and add them to a pan along with the cinnamon, nutmeg and sugar. Cook until the apples are soft.
  3. Blitz the soaked cashews with the maple syrup in a food processor (you may need to add a splash of water). Add the nuts to the apples and stir well.
  4. Fill the pie with the mix and bake until the pastry is golden.

Banana, Blueberry and Coconut

Ingredients (to serve 8)

  • 2 ripe bananas
  • 1 cup of blueberries (fresh or frozen)
  • ¼ cup of desiccated coconut
  • 2 tablespoons of sugar

Instructions:

  1. Heat the blueberries in a pan with the sugar. After 5 minutes, add the sliced banana.
  2. Add the desiccated coconut and cook for a further 10 minutes.
  3. Allow the mix to cool before using it to fill the pie.

Serve the pie with cream, custard, or ice cream for a real autumnal treat.

Okay, so shepherd’s pie might be defined as a minced meat pie topped with mashed potato, but just because meat is usually central to this dish doesn’t mean that you can’t create a vegan version. After all, we have veggie burgers and sausages, don’t we? So check out this vegan shepherd’s pie recipe that is just as hearty and yummy as the original, and isn’t even that hard to cook.

Ingredients

  • Potatoes
  • Vegan butter
  • Salt
  • Pepper
  • Olive oil
  • Onion
  • Garlic
  • Tomato paste
  • Lentils
  • Vegetable stock
  • Peas
  • Carrots
  • Green beans
  • Corn
  • Alternatively, a bag of frozen mixed veggies

Directions

Roughly dice your potatoes and place them into a large pot. Fill with water until they’re covered and bring to a boil. Add the salt, cover, and cook until they’re fork-soft.

In the meantime, preheat the oven to 425 degrees F. Grease a large baking dish with oil. Chop your onions and mince your garlic.

Once cooked, drain and mash the potatoes. Add vegan butter and season with salt and pepper. Cover and set aside.

Heat olive oil in a large saucepan over medium heat. Add your garlic and onions and saute for about five minutes. Add tomato paste, salt, and pepper. Add lentils and vegetable stock. Stir and bring to a low boil. Simmer until lentils are cooked through, about 40 minutes. Remove the lid and continue to simmer, stirring frequently, until any excess liquid cooks off.

Add the peas, carrots, green beans, and corn and cook for a final ten minutes.

Put the cooked lentils and veggie mixture into the prepared baking dish. Top with mashed potatoes. Smooth down and season with salt and pepper. Bake for 10 to 15 minutes until golden brown.

Between Alice in Wonderland, Game of Thrones, The Little Mermaid, and Sleeping Beauty her pies are an ode to films, TV shows, and childhood stories.

“I love love love playing with different mediums and materials and liked the idea that pies, by nature, allow you to work with several different layers. Once I started brainstorming design concepts, I also realized they’re a unique medium for storytelling. I love the storytelling aspect and usually focus on creating a sense that the viewer is peeking into a unique edible world,” Joy told Bored Panda.

Pies aren’t the only thing you’ll find on the award-winning dessert designer’s Instagram, no baked good is off-limits—there are cookies, cupcakes, cakes, and donuts. And all of her creations are works of art with tons of themes and styles. They all look super delicious!
