  • 2 large heirloom tomatoes
  • 2 peaches, halved and pitted
  • 1 lemon, juiced
  • Knob of ginger, peeled
  • Salt

Instructions:

  1. Place the tomatoes, peaches, and ginger in a blender and blitz until liquidized. 
  2. Strain the mixture through a fine-mesh sieve. 
  3. Add in the lemon juice and salt to taste. Serve chilled over ice.

Ever had a dinner party where you really wanted to impress? Maybe a first date? Or meeting your partner’s parents? This simple dessert is so classy that it will seem like you spent hours cooking, when, in reality, it all comes together in just a few minutes.

Ingredients:

  • 3-4 whole ripe peaches
  • 3 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 1 cup whipping cream
  • 1 cup mascarpone cheese
  • 1 tablespoon confectioner’s sugar
  • 1 teaspoon vanilla extract/vanilla bean paste

Method:

  1. Slice the peaches in half; keeping on the skin if you prefer. 
  2. Melt butter in a heavy skillet over medium heat. Continue to cook for about 10 minutes, swirling the pan occasionally, until the butter is toasty and golden brown. Add in the brown sugar and stir until melted.
  3. Place the peaches, flesh side down, in the pan and fry until they caramelize. Flip them over and do the same on the other side.
  4. Combine the cream, mascarpone, confectioner’s sugar, and vanilla in a bowl.
  5. Serve the peaches warm with a dollop of mascarpone cream on top.

Peaches are tasty in all forms. No matter whether you consume them fresh, canned, or grilled, they will always be great. Yes, you read that right. Grilled peaches are a thing, and they’re more awesome than you can imagine, especially when served with some ice cream. Want to know how to make grilled peaches? Then continue reading.

Ingredients

  • 4 raw peaches
  • 2 tablespoon melted butter
  • 2 tablespoon brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Ice cream

Instructions

1. Preheat a grill pan on a stove or fire up a grill. Either will get the job done. Cut the peaches in halves and remove the pits.

2. Mix the brown sugar, cinnamon, and nutmeg in a separate bowl. Brush the inner sides of the peach halves with melted butter. Place them on a grill pan or grill.

3. Grill the peaches until you notice grill marks, and then flip them. Sprinkle the halves with brown sugar, cinnamon, and nutmeg mixture. Brush with more melted butter.

4. Grill for several more minutes until the sugar dissolves. Remove the peach halves from the grill pan or grill and allow them to cool down a bit.

5. Place the peaches on a plate, add two scoops of ice cream and dig in!

Summer fruits are by far our favorites—with all the berries, melons, and stone fruits, there’s so much variety. But, some fruits like nectarines and peaches are just so similar to each other. What’s the difference between these fruits and which ones should you use in your recipes?

You may be surprised to learn that nectarines are a type of peach. These two fruits taste about the same, and the easiest way to differentiate them is by the skin. Nectarines are smooth and have a slightly firmer texture than peaches, which makes them great for grilling. They work well when paired with cheese, served in a salad, or over ice cream.

Peaches have fuzzy skin and are usually softer than nectarines. There are different varieties of peaches and each has a different flavor. The yellow-fleshed ones are better for canning and the white-fleshed ones are sweeter. Fresh peaches are great in savory recipes like salads and salsas or they are amazing in peach pie.

When deciding which to buy, get whichever is fresher and smells more fragrant. If the peaches or nectarines are unripe, store them in a brown paper bag on the kitchen counter. When they’re ripe, be sure to eat them in a few days or to store them in the fridge.
