These sweet potato nachos are a really healthy alternative to the normal tortilla chips, they are topped with black beans, tomatoes, and cheese and have tons of flavor. You can change up the toppings and add some dip to have yourself a really delicious and healthy appetizer.

Ingredients:

  • 2 sweet potatoes
  • 2 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • ½ cup black beans
  • 1 cup shredded Mexican cheddar cheese
  • 1 jalapeno, sliced
  • ½ cup grape/cherry tomatoes, chopped
  • ¼ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced or chopped (optional)

Instructions: 

  1. Preheat the oven to 400°F. Spray a large baking sheet with olive oil cooking spray.
  2. Slice sweet potatoes into ¼ inch rounds
  3. In a large bowl, combine the sweet potatoes, oil, garlic powder, onion powder, cumin, paprika, chili powder, and sea salt and gently toss to coat.
  4. Place seasoned sweet potatoes on a baking sheet, spacing out the pieces so that they roast instead of steam.
  5. Bake for 25 minutes, tossing halfway until sweet potatoes are tender and starting to brown.
  6. Remove the pan from the oven; push the sweet potatoes together in the center of the pan. Top with black beans, sprinkle with cheese and add jalapeño slices on top. Return to the oven and bake until the beans are heated through and the cheese has melted, about 6-7 minutes.
  7. Top the sweet potatoes with chopped tomato, red onion and cilantro. Add avocado and serve directly from the sheet pan.

Necessity may profess to be the mother of invention, but if you ask us, laziness has definitely resulted in us coming up with an ingenious method or two. A case in point is the Frito pie. The snack was likely created because it was way easier to throw nachos ingredients into a bag of chips rather than onto a plate and then have to wash up afterward—not that we’re complaining!

Ingredients:

  • 6 bags Fritos
  • 1 jalapeño, thinly sliced
  • 2 cups shredded Cheddar
  • 1 tablespoon extra-virgin olive oil
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 pound ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon  ground cumin
  • 1 teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • Kosher salt
  • Freshly ground black pepper
  • 1 can crushed tomatoes
  • 1 can pinto beans, drained and rinsed
  • 1 tablespoon sour cream

Instructions:

  1. Heat the oil in a large pot over medium heat. Add half an onion and cook for about 5 minutes, until soft. Stir in the garlic and cook until fragrant, then add the tomato paste and stir to combine. Add the ground beef and cook until it is no longer pink. Drain the fat and return the meat to the heat.
  2. Add in the chili powder, cumin, oregano, cayenne, and season generously with salt and pepper. Pour in the crushed tomatoes and pinto beans and bring to a boil. Reduce the heat and allow to simmer for 20 minutes. Season with more salt and pepper, if necessary.
  3. Open the bags of chips and ladle in the chili mixture. Top with cheddar, the remaining chopped white onions, jalapeños, and sour cream.

Nachos are a favorite plate to prepare when craving Mexican flavors. They’re simple to make, full of flavor, and don’t require a ton of expertise or knowledge in the kitchen to get right.

Do you want to learn how to make a quick vegan version at home? Here’s how!

Ingredients

  • 1 150 gram bag tortilla chips
  • 4 ounces vegan shredded Monterey Jack cheese
  • 4 ounces canned black beans
  • ½ small tomato, diced
  • ½ avocado, diced
  • 8 jalapeno rings, chopped

Instructions

  • Begin the recipe by preheating your oven to 400 degrees F.
  • Take a sheet pan and line it with aluminum foil, being sure to cover the entire surface of the pan. For the first layer, empty the entire bag of tortilla chips onto the pan, spreading them evenly across its surface.
  • Next, add the vegan shredded cheese and the black beans on top of the tortilla chips in an even fashion. This will allow them to melt together. Go ahead and add the avocado and jalapeno rings as well.
  • Bake in the oven for approximately 6-8 minutes, or until the cheese has melted and the tortilla chips are golden-brown. Open the oven and allow to cool for 10-15 minutes. Remove the sheet pan, add the diced tomatoes on top, and enjoy!

Black Beans

Black beans are a great source of protein and they taste so good with most Mexican-style dishes. This is exactly why you should try loading your nachos with black beans—their flavors combine so well, you’ll be wondering why you never added them before!

Shredded Chicken or Beef

Similar to black beans, adding some meat to your nachos really increases the protein. It might even level your nachos up from a snack to a full-blown meal! Just remember to cook the meat before adding it to your nachos, because nachos cook really fast. 

Replace Your Chips

There are so many higher-protein options for chips, and you can easily swap your plain corn chips for quinoa chips or the many other protein chips you see at the grocery store. If you really want to level up your nacho game, you can even slice a sweet potato and use that as the base later for your nachos instead of chips!

These sweet potato nachos are a really healthy alternative to the normal tortilla chips, they are topped with black beans, tomatoes, and cheese and have tons of flavor. You can change up the toppings and add some dip to have yourself a really delicious and healthy appetizer.

Ingredients:

  • 2 sweet potatoes
  • 2 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • ½ cup black beans
  • 1 cup shredded Mexican cheddar cheese
  • 1 jalapeno, sliced
  • ½ cup grape/cherry tomatoes, chopped
  • ¼ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced or chopped (optional)

Instructions: 

  1. Preheat the oven to 400°F. Spray a large baking sheet with olive oil cooking spray.
  2. Slice sweet potatoes into ¼ inch rounds
  3. In a large bowl, combine the sweet potatoes, oil, garlic powder, onion powder, cumin, paprika, chili powder, and sea salt and gently toss to coat.
  4. Place seasoned sweet potatoes on a baking sheet, spacing out the pieces so that they roast instead of steam.
  5. Bake for 25 minutes, tossing halfway until sweet potatoes are tender and starting to brown.
  6. Remove the pan from the oven; push the sweet potatoes together in the center of the pan. Top with black beans, sprinkle with cheese and add jalapeño slices on top. Return to the oven and bake until the beans are heated through and the cheese has melted, about 6-7 minutes.
  7. Top the sweet potatoes with chopped tomato, red onion and cilantro. Add avocado and serve directly from the sheet pan.

Necessity may profess to be the mother of invention, but if you ask us, laziness has definitely resulted in us coming up with an ingenious method or two. A case in point is the Frito pie. The snack was likely created because it was way easier to throw nachos ingredients into a bag of chips rather than onto a plate and then have to wash up afterward—not that we’re complaining!

Ingredients:

  • 6 bags Fritos
  • 1 jalapeño, thinly sliced
  • 2 cups shredded Cheddar
  • 1 tablespoon extra-virgin olive oil
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 pound ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon  ground cumin
  • 1 teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • Kosher salt
  • Freshly ground black pepper
  • 1 can crushed tomatoes
  • 1 can pinto beans, drained and rinsed
  • 1 tablespoon sour cream

Instructions:

  1. Heat the oil in a large pot over medium heat. Add half an onion and cook for about 5 minutes, until soft. Stir in the garlic and cook until fragrant, then add the tomato paste and stir to combine. Add the ground beef and cook until it is no longer pink. Drain the fat and return the meat to the heat.
  2. Add in the chili powder, cumin, oregano, cayenne, and season generously with salt and pepper. Pour in the crushed tomatoes and pinto beans and bring to a boil. Reduce the heat and allow to simmer for 20 minutes. Season with more salt and pepper, if necessary.
  3. Open the bags of chips and ladle in the chili mixture. Top with cheddar, the remaining chopped white onions, jalapeños, and sour cream.

Nachos are a favorite plate to prepare when craving Mexican flavors. They’re simple to make, full of flavor, and don’t require a ton of expertise or knowledge in the kitchen to get right.

Do you want to learn how to make a quick vegan version at home? Here’s how!

Ingredients

  • 1 150 gram bag tortilla chips
  • 4 ounces vegan shredded Monterey Jack cheese
  • 4 ounces canned black beans
  • ½ small tomato, diced
  • ½ avocado, diced
  • 8 jalapeno rings, chopped

Instructions

  • Begin the recipe by preheating your oven to 400 degrees F.
  • Take a sheet pan and line it with aluminum foil, being sure to cover the entire surface of the pan. For the first layer, empty the entire bag of tortilla chips onto the pan, spreading them evenly across its surface.
  • Next, add the vegan shredded cheese and the black beans on top of the tortilla chips in an even fashion. This will allow them to melt together. Go ahead and add the avocado and jalapeno rings as well.
  • Bake in the oven for approximately 6-8 minutes, or until the cheese has melted and the tortilla chips are golden-brown. Open the oven and allow to cool for 10-15 minutes. Remove the sheet pan, add the diced tomatoes on top, and enjoy!
