Zucchini is a summer squash that’s incredibly versatile, flavorful and healthy, not to mention that it contains zero fat. But have you ever thought of making a zucchini pizza? Here’s how! 

Ingredients: 

  • 6 small zucchinis (about 4 oz each) 
  • 1/2 tsp dried oregano 
  • 3 tsp olive oil 
  • 1/2 small onion, chopped 
  • 1/4 cup ricotta 
  • 1/4 cup plus 1 Tbsp grated parmesan 
  • 1/4 cup marinara sauce 
  • 1/4 cup mini pepperoni slices 
  • 2 oz mozzarella coarsely grated (1/2) 
  • chopped parsley 

Instructions: 

  1. Heat the oven to 4750F and put a small baking sheet in it.
  2. Cut the zucchinis in half lengthwise. Scoop out the flesh and put it aside.
  3. Add 1 tbsp oil on the halved zucchinis and put them on the baking sheet with the peel up. Bake them for 4 minutes then take them out.  
  4. Put the remaining olive oil in a skillet, add the onions, salt, and pepper and cook on medium heat. Let it sauté for 5 minutes. Add the flesh to the skillet along with oregano and let it cook for 2 min. Put ¼ cup parmesan, ricotta, and marinara and stir. 
  5. Fill the zucchini shells with the mixture. Put mozzarella, parmesan, and pepperoni on top. Broil for 3-5 min, until it gets brown.
