Ingredients:

  • 1 1/2 lbs skinless chicken breasts
  • Red pepper flakes
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 cup olive oil
  • 3 garlic cloves
  • 1 cup Greek yogurt
  • 1 cup couscous
  • 1 cucumber
  • 2 tablespoons dill
  • 1/2 cup feta
  • 1/2 cup pitted Kalamata olives
  • Lemon juice

Instructions:

  1. Pour 1/2 cup of water into your instant pot. Add the olive oil, oregano, red pepper flakes, and two garlic cloves to the mix and blend. Then, throw in the chicken breasts, two teaspoons of salt, and a few grinds of pepper, making sure that your chicken is well coated by the other ingredients.

Fall is here, and for us, that means soup season is officially upon us. There’s nothing we love more when the weather turns crisp than a good, hearty bowl of soup, especially when said soup requires very little on our part in the way of preparation. For low-maintenance, set-it-and-forget-it cooking, we love using an Instant Pot, though you can definitely make many of the same recipes using a slow cooker from any brand. Prep your ingredients ahead of time, throw them in the pot in the morning, and a few hours later, your soup will be ready—no additional work necessary. Scroll down for some of our favorite Instant Pot soup recipes for fall.

Pumpkin Sweet Potato Soup

Could we really call this a list of fall soup recipes without some pumpkin? This recipe by Bucket List Tummy is full of fall flavors like sage and cinnamon and is delicious when topped with some toasted pumpkin seeds. It’s 100% vegan and super high in beta carotene thanks to all of the orange veggies.

Vegetarian White Chili

Cozy up with a bowl of this white chili by Taylor, the author and recipe developer behind Greens &  Chocolate. It’s loaded with protein and fiber from beans and goes perfectly with a little shredded cheese and avocado. Eat it on its own or enjoy it with some tortilla chips for crunch!

Veggie-Loaded Tomato Soup

This recipe from The Natural Nurturer is perfect for children (or, let’s be real – adults, too) who could probably do with eating more vegetables but don’t necessarily love the way they taste. It tastes like a rich and velvety tomato soup but secretly contains five different veggies.
