Instant Pot Greek Chicken Bowl

If you’re craving some meaty Mediterranean flavors, then a scrumptious Greek chicken bowl is certainly for you. While it may sound like a complicated dish, this wholesome recipe is a breeze if you have an instant pot on hand. Here’s your guide to cooking an instant pot Greek chicken bowl.

Ingredients:

  • 1 1/2 lbs skinless chicken breasts
  • Red pepper flakes
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 cup olive oil
  • 3 garlic cloves
  • 1 cup Greek yogurt
  • 1 cup couscous
  • 1 cucumber
  • 2 tablespoons dill
  • 1/2 cup feta
  • 1/2 cup pitted Kalamata olives
  • Lemon juice

Instructions:

  1. Pour 1/2 cup of water into your instant pot. Add the olive oil, oregano, red pepper flakes, and two garlic cloves to the mix and blend. Then, throw in the chicken breasts, two teaspoons of salt, and a few grinds of pepper, making sure that your chicken is well coated by the other ingredients.
  2. Set your instant pot to pressure cook on high, cooking for 3 minutes. Then, unlock the lid and allow the steam to be released from the pot. Place your chicken in a separate bowl and add couscous, salt, and some pepper to the instant pot. Let the couscous cook for 6 to 7 minutes, until fluffy.
  3. In a medium bowl, mix the Greek yogurt, lemon juice garlic cloves, and two tablespoons of water. Mix until combined.
  4. On a plate, spread some more yogurt and top with the cooked couscous, cucumbers, tomatoes, Kalamata olives, and feta. Finally, cut your chicken into smaller pieces, adding it to the mix. Top it all off with a drizzle of olive oil and dill.
