Butter and oil are two of the most essential ingredients in cooking. As the first thing we add to the pan for frying or sautéing as well as a main ingredient in most baked goods, just about anyone who’s been in a kitchen will have a decent familiarity with each of them. But while they may seem more or less interchangeable, there are several factors to consider when deciding what to drizzle into your pan.

Health

With the commonality of heart disease and high blood pressure, many people may wish to steer clear of saturated fat. Butter is a saturated fat—it is solid at room temperature—while oil is unsaturated. That being said, new research shows that the “saturated/unsaturated” distinction may not be as important as we thought, and in some cases butter might even be beneficial. If you’re unsure what’s best for your personal health, consult your doctor about saturated fats.

Flavor

Butter has a distinct flavor and richness often found in western cooking. It may also be found in Indian dishes in the form of ghee. Butter will round out the flavor of comfort foods like pancakes, hash browns, or grilled cheese particularly well. On the other hand, oils come from many different sources, meaning there are many flavor profiles to choose from. Olive oil, sesame oil, coconut oil, and more all have completely different flavors and will mix will different dishes well. However, these more diverse oils won’t handle high heat as well as normal canola oil or butter, and they are generally a lot more expensive.

Deep Frying

If you are deep frying, you will probably want to stick to regular canola oil. This will handle the heat without burning or browning, and will give you a more even crusty outer layer than butter. That being said, if you want a more caramelized quality on your fried food, you can give butter a try as it will brown in high heat. Just be careful not to let it get too dark, as it can burn.

Fried chicken and waffles have been a classic dish of American cuisine for years, but this traditional dish got a whole new spin to it by Chick N Cone.

Instead of using classic bone-in chicken, Chick N Cone coats tender, boneless chicken breast pieces with a delicious panic breadcrumb coating. The pieces are fried until crispy and chopped into bite sized pieces. That already sounds delicious enough, but Chick N Cone takes it to the next level by tossing the chicken in homemade sauce and stuffing the morsels into homemade vanilla waffle cones.

Their menu often serves up specials like Sriracha Mac and cheese fried chicken waffle cone—which is just as delicious and decadent as it sounds.

According to the shop’s owner, there is always a line outside their door of hungry New Yorkers just waiting to get their hands on a Chick N Cone. “We serve about 450 cones a day and there are days when we’ve even hit 1,000,” co-owner Jonathan Almanzar told TODAY Food. “We go through about 2,500 pounds of chicken per week.”

Funnel cakes are that treat you always want to get in the summertime. Essentially all it is is fried batter, but when you take a bite, it really reminds you of something special and nostalgic. Making them at home is super and will have all your friends and family reminiscing.

Recipe

  1. Begin by pouring neutral oil into a pot and heating it while you make the batter.
  2. In a bowl, mix 1 ½ cups of flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, and a pinch of salt.
  3. In a measuring pitcher, pour in 1 ¼ cups of whatever type of milk you like, 1 egg, 1 teaspoon of vanilla, 2 tablespoons of melted salted butter, and whisk everything together.
  4. Pour the wet mixture into the dry and stir to form the batter.
  5. Pour the batter into a squeeze bottle or a medium-sized funnel and use your finger to cover the bottom so the batter doesn’t drip.
  6. Release the batter into the oil and make it into a circle, but make sure you are always moving around so there are small holes in between the layers.
  7. Fry each side for 2-3 minutes until golden, and then drain on paper towels.
  8. Dust with powdered sugar and dig in!

Pastel de queijo is a fried cheese snack that has curious origins. Legend states that Japanese immigrants to Brazil popularized this treat, frying Chinese wontons filled with cheese. They then became extremely popular.
