La mia fluffosa MESSICO E NUVOLE!! Cacao, amaretti, caffè e rum. Vi chiederete perché l’ho chiamata così, ve lo svelo subito. Per tutto il tempo che pesavo gli ingredienti, li mescolavo e ancora mentre aspettavo che cuocesse, la canzone “Messico e nuvole” risuonava nella mia testa. Forse perché la miscela di caffè che ho usato si chiamava proprio “Messico” e poi nuvola di addice proprio per la sua leggerezza. Sono proprio soddisfatta di questa torta!! 🍫☕🍫☕🍫☕ Ingredienti per uno stampo diam.18: 2 uova 80 gr di zucchero 20 gr di cacao amaro 50 gr di farina 50 gr di amaretti tritati finemente 1/2 fiala aroma rum 65 ml di caffè 40 ml olio di semi 1/2 cucchiaino di bicarbonato 1/2 cucchiaino di cremor tartaro In una ciotola mescolare lo zucchero con il cacao amaro, la farina, gli amaretti e il bicarbonato. Aggiungere il caffè, l’olio, l’aro ma al rum e i tuorli d’uovo. Mescolare fino a ottenere un impasto omogeneo. A parte montare a neve gli albumi con il cremor tartaro. Aggiungere gli albumi mescolando delicatamente dal basso verso l’alto. Infornare per 50 minuti a 160 gradi e altri 5 minuti a 170 gradi. This Raspberry Coconut Cake, with Coconut Streusel, gives you flavorsome. A combination of easy and simple to cook with amazing taste. The perfect choice for coconut lovers.

Ingredients:

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 cup granulated sugar
1 large egg
1/2 cup coconut milk
1 cup raspberries, fresh or frozen
6 tablespoons unsalted butter, at room temperature
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
3/4 cup sweetened flaked coconut

Coconut Streusel:

1/4 cup all-purpose flour
1/3 cup sweetened flaked coconut
1/3 cup brown sugar
4 tablespoons cold butter pieces

Instructions:

  • Heat the oven to 35 degrees F. Take a 9-inch springform and butter it.
  • Make a mixture of flour, baking powder, and salt in a bowl.
  • Beat the butter and sugar in the mixing bowl until it becomes pale and fluffy.
  • Add coconut milk, an egg, vanilla, and coconut extract. Mix it together. Place the butter in buttered pan.
  • Put raspberries on top of butter.
  • To prepare coconut streusel topping, Mix flour, brown sugar, and coconut in a small bowl. Paste topping of coconut streusel on the cake.  Bake for 45-50 minutes.
  • Cool it and cut into slices.
