Taco Stuffed Tomatoes Are A Perfect Healthy Lunch

Why stuff tortillas for lunch, when you can switch to a healthier but equally delicious version of your favorite dish? Buy fresh tomatoes instead, and stuff them with taco meat, cheese, bacon, onion and sour cream. This is a nutritious and tasty lunch—or even dinner option—that can easily be prepared in less than 20 minutes.

Ingredients

  • 1# ground beef
  • 1.25 ounce taco seasoning pouch
  • 1 medium onion or 2 tbsp. dehydrated onion
  • 3/4 cup water
  • 1/4 cup taco sauce
  • 8 oz tomato sauce
  • 2 cups shredded Mexican cheese
  • 1/2# bacon
  • 2 green onion
  • 1 cup sour cream
  • 1 head Romaine lettuce

Instructions

  1. Cook ground beef and onion over medium heat until no longer pink, and drain fat when finished.
  2. Add taco seasoning and stir with a wooden spoon to break up meat.
  3. Add water and taco sauce, then stir in tomato sauce and cook until bubbly. Turn down the heat to low and cook until thick enough.
  4. Turn the tomatoes so they are stem side down and slice each into wedges, making sure not to cut all the way through.
  5. Fill each tomato with the taco filling and top with cheese, bacon, a spoonful of sour cream and sliced green onion before serving.
