Why stuff tortillas for lunch, when you can switch to a healthier but equally delicious version of your favorite dish? Buy fresh tomatoes instead, and stuff them with taco meat, cheese, bacon, onion and sour cream. This is a nutritious and tasty lunch—or even dinner option—that can easily be prepared in less than 20 minutes.

Ingredients
- 1# ground beef
- 1.25 ounce taco seasoning pouch
- 1 medium onion or 2 tbsp. dehydrated onion
- 3/4 cup water
- 1/4 cup taco sauce
- 8 oz tomato sauce
- 2 cups shredded Mexican cheese
- 1/2# bacon
- 2 green onion
- 1 cup sour cream
- 1 head Romaine lettuce
Instructions
- Cook ground beef and onion over medium heat until no longer pink, and drain fat when finished.
- Add taco seasoning and stir with a wooden spoon to break up meat.
- Add water and taco sauce, then stir in tomato sauce and cook until bubbly. Turn down the heat to low and cook until thick enough.
- Turn the tomatoes so they are stem side down and slice each into wedges, making sure not to cut all the way through.
- Fill each tomato with the taco filling and top with cheese, bacon, a spoonful of sour cream and sliced green onion before serving.
