Stuffed Avocados – The Stuff That Breakfast Dreams Are Made Of

Breakfast is the most important meal of the day, so you need to make sure to have a hearty meal which is as nutritious as possible, since you’ll need strength to power through the day ahead of you. If your mornings are super busy, you’ll need not only healthy ingredients, but an easy, quick-to-prepare recipe as well. Here is one that will take only 10 minutes of your time and provide you with a total of 400 nutritious calories per serving.   

Ingredients: 

  • 2 avocados, halved and pitted 
  • 8 cherry tomatoes, halved 
  • 3 oz fresh mozzarella, cut into pieces 
  • 1 tbsp balsamic vinegar 
  • 1/4 cup fresh basil, torn  
  • 2 tbsp olive oil 

Instructions: 

  1. Take out the avocado flesh, but leave a small border around it. Cut the flesh into dices and put it aside. 
  2. Toss the cherry tomatoes with some olive oil in a large bowl. Add vinegar, salt, and pepper according to taste.
  3. Add the diced avocados, the basil, and the mozzarella and mix them together. The avocado halves from before will serve as a plate. Split the salad in equal parts in each half.  
  4. Serve with a piece of toast.
