Spice Up Basic Eggs With These 3 Recipes

Sometimes your over-easy egg, scrambled eggs, or frittata can be a little boring and you are always looking for ways to make the basic egg recipe into something more exciting. Eggs can be a staple at nearly every meal because they can be cooked in so many different ways. Here are three egg recipes to add some more spice to your meals.

Breakfast Egg Muffins

These are really easy to make and can be eaten on the go. You can make enough for the week and freeze them so you will always have a ready-to-eat breakfast. Add any vegetables to the mix and whatever spices you like and just mix it up from week to week.

The base for all egg muffins is 12 large eggs combined with half an onion finely chopped and salt and pepper to taste. Add 1/2 cup of milk or plant milk to the mix. Pour the mixture into a muffin tin (up to halfway) and then add your veggies of choice. Bake for 15-20 minutes and enjoy for the next few days.

Lunch Spinach Shakshuka

This middle eastern dish is usually made with tomatoes, but if you are looking to add more green vegetables to your plate then spinach shakshuka is the way to go.

All you need is a large pan, olive oil, onions, eggs, spices of your choice, and lots of spinach, and you will have the most filling egg dish. Soften the onions in the pan and add the spinach to low heat, the spinach needs to be soft. Make four indentations and crack the eggs into them. Raise the heat to medium and cover the pan and cook until the whites are set and the yolks are a little runny. Enjoy with a few slices of toast.

Dinner Frittata

A really easy dish to make and another one that you can add almost anything to it to keep it interesting.

You need eight eggs, whatever choice of vegetables you decide, and some salt and pepper and spices. Whisk all the ingredients together. Heat some olive oil in an ovenproof skillet over medium-high heat and saute one onion until soft. Reduce the heat to low and add the egg mixture to cook for about two minutes. Place in the oven for seven to nine minutes. And enjoy!
