This quick and easy roasted chicken and tomatoes recipe can have you enjoying a delicious and wholesome meal with minimum fuss.
Just follow these simple steps to find the perfect chicken dinner.
Gather Ingredients
For this recipe you will need 2 tablespoons of olive oil, 4 boneless and skinless chicken breasts, kosher salt and pepper, 4 sprigs fresh thyme, 2 cloves garlic, 1 lb cherry tomatoes, chopped 1/2 teaspoon fennel seeds, 1/4 cup dry white wine and chopped parsley.
Cook Chicken Breasts
After preheating the oven to 425°F, heat 1 tablespoon of olive oil in a pan on medium heat. Season chicken breasts with 1 teaspoon of salt and pepper and cook on one side for 5-7 minutes, or until golden brown.
Add Seasoning
Once the first side is golden brown, flip the chicken and add the tomatoes, garlic, thyme and fennel. Drizzle on 1 tablespoon of olive oil and season each breast with 1/4 teaspoon of salt and pepper. Pour on the wine.
Roast and Serve
Once the breasts are seasoned, put the skillet in the oven and roast for 8-12 minutes, or until the chicken is cooked all the way through.
To serve, put the chicken onto plates and sprinkle the tomatoes with parsley. Serve with warm crusty bread.
