Roasting is one of the best ways you can prepare vegetables, giving them a nice texture and color that brings out the best of their flavor and makes them oh-so-yummy. So before you roast your next tray of veggies, here are some secrets for how to make them turn out as well as possible.

Don’t Overcrowd Your Baking Sheet

The reason roasted veggies are so good is that they’re, well, roasted. But if you overcrowd your vegetables in your baking sheet, they won’t roast; they’ll steam. Then they’ll turn out as bland and boring as steamed vegetables, and you don’t want that. So if you’re having a hard time fitting all your veggies on a single baking sheet, just use another one.

Dry Your Veggies

Similarly, in order to avoid unintentionally steaming the vegetables instead of roasting them, you’ll want to make sure they’re completely dry before you put them in the oven. So after rinsing your veggies, go ahead and thoroughly pat them dry before adding the oil or fat.

Get Uniform

To make sure all your vegetables finish cooking at the same time, make sure you cut them into uniform size pieces and only roast similar vegetables together, since different veggies can have different cooking times.
