“Shrimp” is one of the first things that come to mind when someone mentions seafood, and its versatility is one of its biggest strengths. You can use shrimp to take all sorts of dishes to the next level, including salads – and Jennifer Emilson shared quite a few recipes on her food blog The Lemon Apron.
Nordic Shrimp Salad
Seafood is a staple of Nordic cuisine, and Emilson couldn’t resist making a salad inspired by it. Her trip to Sweden and Denmark and the dishes she discovered there motivated her to make this delicious salad, made with poached shrimp, diced cucumbers, celery, radishes, and homemade dressing.
Poached Shrimp and Tomato Salad
Emilson also turned to poached shrimp when making this nutritious salad but tweaked the list of additional ingredients. Diced cucumbers and onions are still around, but you should also add cherry tomatoes to the mix to make your salad truly pop.
Mango & Avocado Shrimp Salad
Mangos and avocados are a match made in heaven, and Emilson is a huge fan of this flavor combo. She made them the main ingredients in one of her tasty salads and took things to another level by adding shrimp and homemade lemon poppyseed salad dressing to the mix.
