Sambal is a tasty hot sauce that remains largely unknown outside its native Indonesia and neighboring countries like Malaysia and Singapore. If you ask us, it’s about time for that to change because everyone should have some sambal in their lives.

A great thing about sambal is its versatility. The sauce pairs great with snacks like chicken wings but also with all sorts of other things like raw veggies, fish, and soups. On top of that, you can get all sorts of different versions of sambal—there are more than 200 varieties in Indonesia alone. But let’s not get ahead of ourselves. If you want to see what sambal is all about, you can start by making the most basic version at home.

Ingredients:

  • 0.5 pounds red chili peppers
  • 1 tablespoon vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon kosher salt
  • 1 tablespoon brown sugar
  • 1 tablespoon kosher salt

Instructions:

  1. Remove the stems from the chili peppers, but don’t clean the seeds.
  2. Boil the peppers in clean water for three minutes and then pat them dry with a paper towel.
  3. Put the peppers in a blender and add the vinegar, oil, salt, and sugar. Blend until you get a smooth paste.
  4. Transfer your sambal to a jar and store it in a fridge for future use.
