People who have tried ruby chocolate describe its taste like something between chocolate tart and berries. However, it’s not supposed to contain berries or berry flavors, so its color and flavor remain a mystery. “Ruby offers an intense sensorial delight, a totally new taste experience: neither bitter, milky or sweet, but a tension of fresh berry fruitiness and luscious smoothness,” we read on Callebaut’s website.
