If there is one veggie that doesn’t get the screen time it deserves, it has to be the simple radish. Part of the kale and cauliflower clan, radishes have a much sharper flavor which is why they may not be as popular. Yet, these little red orbs have a secret — they can be used to make crisps that are so good they put potatoes to shame.

Ingredients:

  • 7 medium radishes
  • 1 tablespoon vegetable oil
  • ½ teaspoon garlic powder
  • Kosher salt
  • Freshly ground black pepper

Instructions:

  1. Using a mandoline, thinly slice the radishes and place them in a large bowl. You can keep the skins on if you wish.
  2. The crisps can be made using an oven or air fryer. To bake, pre-heat the oven to 225°F and toss the sliced radishes in olive oil and the seasoning. Spread them in an even layer on large baking sheets, making sure that none of the pieces overlap. Bake the radishes for 1 hour to 1 hour and 15 minutes, until crisp. Allow to cool for 5 minutes before serving.
  3. To air fry, toss the sliced radishes with garlic powder, salt, and pepper. Cook the radishes in batches at 350°F for 6-7 minutes. Shake the basket halfway through to ensure crispiness.
