Polenta is Perfect for When You Need Something Warm and Comforting

Polenta has grown from a food that was eaten by the lower class into a dish that symbolizes comfort. Creamy and satisfying, the ground yellow corn serves as an ideal bed for seasonal veggies and saucy meats. But, to be fair, you can also eat it on its own as the purest form of comfort food.

Ingredients:

  • 1 cup polenta
  • 4 cups water or stock
  • 3 tablespoons butter, divided
  • 1 cup whole milk / ½ x cup cream
  • 1 cup freshly grated Parmigiano-Reggiano cheese, plus more for garnish
  • 1 teaspoon fine salt
  • 1 teaspoon black pepper

Instructions:

  1. In a medium-sized pot, bring the water or stock to a simmer over medium heat.
  2. Slowly add the polenta and whisk constantly until there are no lumps. Reduce the heat to low and keep whisking until the polenta starts to thicken. 
  3. Remove the polenta from the heat and add in the butter, parmesan cheese, and milk or cream. Season to taste with salt and pepper, and top with more Parmesan before serving.
