Perfect Idea for a Summer Snack

Summertime brings forth some of the best produce. Although you can usually buy anything you want in a supermarket all year round, visiting a farmers market and buying in season fruit and veggies will always come out on top. One of the best vegetables to get during is zucchini, and there is no better way to celebrate it than by grilling it. Take it to the next level with 2 extra ingredients, and your dinner table will never be the same.

Method

  1. Thinly slice zucchini lengthwise using a mandoline or a sharp knife. Grill each side for a few minutes to get nice char marks on them, take them off the head and squeeze over lemon juice.
  2. While they cool, make a pesto in a food processor using garlic, salt, basil, and whatever nuts you have around. Drizzle in olive oil until smooth. You can also use store-bought pesto, but homemade will taste freshest.
  3. Drain and rinse a can of white beans, and toss in about half of the pesto.
  4. Cut the zucchini into ribbons and combine with the rest of the pesto and the white beans. If you aren’t vegan, grate parmesan on top, but omit if you are. Enjoy!
