Pappardelle With Ricotta and Smashed Peas

Being one of the most popular dishes ever that is enjoyed all around the world, pasta is often on the menu in every household. It comes in many shapes and sizes and goes excellent with a variety of sauces. Today, we want to show you a really quick and healthy pasta recipe that you can share with your family and friends. 

Ingredients: 

  • 12 oz pappardelle 
  • 1/2 tsp kosher salt 
  • 1 1/2 cup frozen peas, thawed 
  • 1/2 tsp part-skim ricotta cheese 
  • 1 tsp lemon zest 
  • 1/4 cup chives, chopped 

Instructions: 

  1. First, cook your pasta according to the instructions written on the package. When the pasta is ready, drain it and keep ½ cup of the cooking water. Return the pasta to the pot.  
  2. Take 1 cup thawed peas and put them in the food processor. They need to be roughly chopped. Then add the ricotta and the zest, mix them well together and add seasoning to taste. 
  3. Serve the pasta with a combination of the ricotta mix and the remaining peas on top. If you feel that the pasta is little dry, you can add a bit from the cooking water that you preserved. If you want you can add chopped chives for even more flavor.
