Pancake Pockets are a Revolutionary Way to eat Pancakes on the Go

Everyone loves pancakes, but you can’t really eat them unless you’re sitting down at the table, until now! These pancake pockets are perfect on-the-go breakfasts when you want something sweet but don’t have the time for a sit-down breakfast. 

Ingredients 

  • 1 heaping cup of cake flour 
  • 1 tablespoon of baking powder
  • 1 tablespoon of sugar
  • Pinch of salt
  • ⅔ cup of milk 
  • 1 teaspoon of vanilla 
  • 1 egg
  • 1 tablespoon of butter plus more for greasing
  • ¼ cup of chopped berries
  • ¼ cup of chopped nuts
  • 4 teaspoon of pancake or maple syrup, cold 

Recipe 

  1. Mix all the dry ingredients together in a large bowl. 
  2. In a separate bowl, mix the milk, vanilla, and egg. 
  3. Add the wet ingredients into the dry and stir until just combined, don’t overstir!
  4. Melt the butter and add it into the mix, and gently stir it. 
  5. Heat up a pan or griddle on medium-low heat, grease with butter, and then pour the pancake batter onto it, as little or as much as you want. 
  6. After it starts to bubble, add in a bit of berries, nuts, and syrup, and then pour a little more batter on top to form the pocket. 
  7. Flip the pancake over, cook until golden, and then enjoy!
