Everyone loves pancakes, but you can’t really eat them unless you’re sitting down at the table, until now! These pancake pockets are perfect on-the-go breakfasts when you want something sweet but don’t have the time for a sit-down breakfast.
Ingredients
- 1 heaping cup of cake flour
- 1 tablespoon of baking powder
- 1 tablespoon of sugar
- Pinch of salt
- ⅔ cup of milk
- 1 teaspoon of vanilla
- 1 egg
- 1 tablespoon of butter plus more for greasing
- ¼ cup of chopped berries
- ¼ cup of chopped nuts
- 4 teaspoon of pancake or maple syrup, cold
Recipe
- Mix all the dry ingredients together in a large bowl.
- In a separate bowl, mix the milk, vanilla, and egg.
- Add the wet ingredients into the dry and stir until just combined, don’t overstir!
- Melt the butter and add it into the mix, and gently stir it.
- Heat up a pan or griddle on medium-low heat, grease with butter, and then pour the pancake batter onto it, as little or as much as you want.
- After it starts to bubble, add in a bit of berries, nuts, and syrup, and then pour a little more batter on top to form the pocket.
- Flip the pancake over, cook until golden, and then enjoy!
