Mushroom Cream Soup That’ll Warm You Up This February

We might be teetering towards the edge of winter, but the freezing cold weather doesn’t look like it’s leaving any time soon. If you find the snow keeping you glum, have no fear! This mushroom soup recipe is warm and sweet, and will have you feeling cuddly and optimistic in no time! Here’s how to make it.

What You’ll Need

  • 1 pound sliced mushrooms
  • 1 diced onion
  • 1/2 cup butter or margarine
  • 1/3 cup flour
  • 3 1/2 cups water
  • 1 tablespoon chicken powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Getting Started

Combine the mushrooms and the onions, and then divide them in half. To be clear, this means you now have one group of mushrooms and onions and another group of mushrooms and onions. Take one of the groups and puree it until pasty. Set aside.

After that, melt the butter in a pot over medium heat, and proceed to sauté the other group of mushrooms and onions. Do this until the veggies are golden brown.

Taking Shape

Add the flour to your pot, and stir it in thoroughly. Add the water and chicken powder, and mix until you’ve achieved a thick consistency. Add the rest of the mushrooms and onions, and then the salt and pepper as well.

Allow your soup to simmer for around 30 minutes, and add the heavy cream at the end. Mix over a low flame for 5-10 more minutes, and you’re done!
