Polenta was a dish made in Italy using all sorts of grains, but in modern times have switched to cornmeal. To make it, all you need to do boil it in some a liquid, and voila it turns into a gorgeous smooth porridge-type dish. It’s gluten-free, very versatile, and can be easily manipulated to be made into just about anything! No matter how you enjoy it, there is way to cook it so everyone will love.

Polenta and Shrimp

Shrimp and grits is a classic southern dish, and a fun way to spice it up a bit is by making it with polenta instead! To bring this into the Italian kitchen, use traditional herbs like thyme, oregano, and basil to really elevate the flavor of the polenta. Adding parmesan cheese into the polenta once it’s done cooking is another way to bring a saltiness and richness to the polenta.

Polenta Pizza

Polenta can also be used for an amazing gluten-free pizza crust! All you have to do is boil the polenta as usual, and once it’s done, spread it on a baking sheet into the shape of a pizza. Chill for an hour and then you can put any sauce and toppings on it!
