Recipe

  1. Start by cutting 1 1/4 lb eye of round beef into thin slices. You don’t want them to be too thick, or they won’t dry out enough, so go as thin as you can without ripping them.
  2. Then add the slices to a bowl and put in 3 tablespoons of maple syrup, 1/4 cup of cup Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon kosher salt, 1 tablespoon of drained capers and the same amount of caper juice, 1 teaspoon of chili powder, 1/4 teaspoon of cayenne pepper, 1/2 teaspoon of dried oregano and 1 1/2 teaspoon Tellicherry pepper, or regular black pepper.
  3. Mix everything well and put into a resealable bag to marinate overnight in the fridge.
  4. In the morning, place the strips of beef onto a rack on top of your baking sheet and bake at the lowest possible temperature your oven goes, anywhere from 140-170 F would be best but 180-200 F will also work.
  5. If you don’t have a special rack, you can use your oven rack with something underneath to catch the drippings.
  6. Bake anywhere from 2-5 hours until the meat is pretty dry, store in a resealable bag so the little bit of moisture left will make it pliable enough to eat, and enjoy!
