Make Your Own Instant Noodles for the Perfect Work Lunch

Now that most of us have returned to the office, have you found yourself packing the same boring lunches for work each day? Or maybe you’re spending your hard earned dollars at the nearest café on overpriced sandwiches and cookies. Either way, it can be tough to prep yummy and exciting lunches to keep you feeling focused and energized.

Make your own just-add-boiling-water instant noodles with this easy recipe and you’ll have a delicious noodle soup waiting for you in the office fridge. You’ll never look back!

Ingredients:

  • 1 nest pre-cooked noodles
  • 2 tablespoons kimchi
  • 1/2 cup fresh spinach
  • 1/2 cup shitake mushrooms, thinly sliced
  • 1/4 cup cooked tofu, cut into cubes
  • 3 scallions, finely sliced
  • 2 teaspoons of your favorite veggie stock powder
  • 2 teaspoons chili oil

Instructions:

  1. Thoroughly clean a 26oz jar mason jar or glass Tupperware.
  2. Tuck all the ingredients in, starting with the noodles and finishing with the scallions.
  3. When you’re ready to eat your noodles, simply fill up the jar or container with boiling water and leave to sit for 5 minutes. Give the soup a good stir and get slurping! Lunch al-desko = sorted!
  4. Each jar can be stored in the fridge for up to 4 days.
