Make This Cheesy Veggie Frittata For Breakfast

Frittatas are the most delicious way to get a serving of veggies in before you even start your day. This recipe yields one large frittata that can be cooked up in a flash with basic ingredients you likely already have on hand. Make sure you cook your veggies beforehand—raw vegetables release too much moisture while been cooked with the eggs and can make your frittata soggy!

Ingredients:

  • 12 eggs
  • 3 tablespoons dairy of your choice (milk, heavy cream, yogurt, sour cream, half and half)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup grated cheddar cheese
  • 1 1/2 tablespoons olive oil
  • 1/2 cup finely chopped green onion
  • 1 clove garlic, minced
  • 4 cups cooked vegetables of your choice (spinach, broccoli, bell pepper, tomato, zucchini, mushrooms, etc)

Instructions:

  1. Preheat the oven to 425 degrees F.
  2. Whisk the eggs and dairy together until combined. Mix in the cheese.
  3. Warm the olive oil in a 12 inch cast iron skillet. Add the garlic, green onion and vegetables. Cook until the veggies are hot.
  4. Pour the egg mixture into the pan and quickly mix to combine.
  5. Bake for about 10 minutes or until the eggs look puffed and cooked.
