Start with Perfectly Boiled Eggs

Having perfectly boiled eggs to start with can make a world of difference. Take the eggs out of the refrigerator beforehand and get them to room temperature. Cover the eggs with 1 inch of cold water and bring to a boil. Let them boil for 15 minutes, then put the lid on and remove them from the heat. Leave them for 10 to 12 minutes, and you’ll have perfectly boiled eggs.

Use Extra Egg Yolks for the Filling

The filling for your deviled eggs will be much better if you use extra egg yolks. Boil additional eggs and just use the egg yolks from them to make the filling creamier and richer in taste. You can use the leftover egg whites as a snack.

Most people think they need to mash the egg yolks into a paste, but that will make the filling mushy and runny. Instead, mix carefully and aim for a light and airy consistency.
