Croissants are one of the most delightful things that the French ever came up with. Soft, buttery, and downright delicious, they are the perfect accompaniment to a cup of coffee. Most bakeries make an almond version of the flaky treat, but just in case yours does not, there is still a way to achieve the nutty goodness using a plain croissant and a few extra ingredients.

Ingredients:

  • 4 store-bought croissants
  • ½ cup butter
  • ½ cup brown sugar
  • 1 large egg
  • 1 cup almond flour
  • ½ teaspoon vanilla
  • ¼ teaspoon almond extract
  • Pinch of salt
  • Slivered almonds

Almond syrup

  • ¼ cup hot water
  • ¼ cup sugar
  • ¼ teaspoon almond extract

Instructions:

  1. Make the almond syrup by mixing the almond extract, sugar, and water.
  2. Slice open the croissants and brush with the syrup.
  3. Combine the butter, brown sugar, egg, almond flour, vanilla, almond extract, and salt to make the almond cream filling. You want the consistency of buttercream.
  4. Spread the filling across each croissant half, sandwich them together, and then spread some more on the top. Sprinkle slivered almonds.
  5. Bake at 350F for 20-25 minutes.
