Make Frozen Broccoli Taste Fresh With This Method

The truth is, that vegetables are always best when fresh. But that’s not always possible, especially if the green you desire is not in season. Plan B is to go for frozen, but no one wants veggies that taste like they come out of the freezer, know what we mean? Here is how to get your broccoli tasting like it’s just been picked.

Ingredients:

  • 1 bag frozen broccoli florets
  • 2 tablespoons olive oil
  • ¼ cup Parmesan cheese, grated
  • 1 medium lemon, halved
  • ½ teaspoon kosher salt
  • Freshly ground black pepper

Instructions:

  1. Heat the oven to 450°F, positioning one rack in the middle of the oven and one rack in the highest spot. Place a rimmed baking sheet in the oven while it’s heating.
  2. Combine the still-frozen broccoli, olive oil, salt, and a few grinds of pepper in a large bowl and toss to coat.
  3. Carefully remove the hot baking sheet from the oven, add the broccoli, and spread it into an even layer. Roast on the middle rack for 15-18 minutes, until the broccoli is tender and beginning to brown at the edges.
  4. Remove from the oven and switch the oven to broil. Scatter the Parmesan evenly over the broccoli. Return to the oven and broil on the upper rack for 1 to 2 minutes, until the cheese melts. Squeeze the juice from one lemon half over the broccoli and toss to combine. Cut the other lemon half into wedges and serve alongside the broccoli.
