There are many tasty treats out there, but if you’re someone who loves fish, we really hope you’ve tried lox before. We’re purposely not calling it smoked salmon, because there are multiple different forms of smoked salmon, and we wouldn’t want you to get the wrong idea. Lox is a specific type, and has specific moments where it shines. Here’s what it is, and where it’s tastiest.

Pink, Salty, and Divine

Lox a the version of smoked salmon that looks like a strip of deli meat if that deli meat was slightly off-pink, slimy, and thick. It’s cured, like smoked salmon, but without being smoked. Due to its slimy-ish nature, it can seem a bit off-putting to those unfamiliar with it. But after a while, it grows on you in a way that’s hard to shake.

Bagels and Cream Cheese

Perhaps its most popular use is in a bagel sandwich with cream cheese. Particularly common in Jewish culture, bagels and lox has become somewhat of a cliche—and for good reason. It’s just so darn tasty, and you should try it sometime if you haven’t. But hey, if you’re not such a fan of bagels, lox can also be eaten quite plainly on its own, or in a salad. You’ll enjoy it all the same, but as we mentioned before, that soft texture won’t hold back on you.
