Lindsay Grimes Freedman’s Avocado Boats Will Make You See it in a Whole New Light

Even if avocado toast happens to be your all-time favorite breakfast food, you’re probably looking for some new ways to consume this tasty fruit. Avocado boats may be just the thing for you, and they’re an amazing dinner party snack.

You can get as creative as you want with your own recipe for avocado boats, but the one we’re bringing you today was developed by Lindsay Grimes Freedman of The Toasted Pine Nut. Keep in mind that this recipe serves several people since it’s not recommended to eat too much avocado at once due to its high-calorie content.

Ingredients:

  • 5 strawberries
  • 8 small mozzarella balls
  • 4 avocados
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon white balsamic vinegar
  • 1/4 teaspoon sea salt
  • 1/2 lime, juiced
  • 1 tablespoon mint, chopped
  • 1/8 cup pine nuts, toasted

Instructions:

  1. Cut each of your strawberries into eight pieces, and place them in a bowl with mozzarella balls, preferably cut into quarters. Add olive oil, vinegar, lime juice, and mint to the mix and toss it all together.
  2. Halve your avocados and remove the seeds. If the holes are not wide enough, scoop some of the avocado out with a spoon.
  3. Add the strawberry mixture to the avocado boats with a spoon, and sprinkle them with some chopped mint and pine nuts.
