Lemon blueberry MousSe Cake to make your eve special

Lemon Blueberry Mousse can make you feel like it’s summer, no matter what the weather is like outside. Fruity mousse cake made with a purple tint and garnished with fresh blueberries and slight flavor of lemon is sure to complete your day in the most delicious way.

Ingredients:

Crust:
Crushed 40 Nilla wafers
6 tbsp. butter, melted
Cooking Spray

Mousse:
1 cup of blueberries.
2tbsp of lemon zest and lemon juice
3 cups of condensed cream
2 tbsp of gelatin
Half cup of sugar

Topping:
1 cup of blueberries
1 tbsp. of lemon juice
Half cup of powdered sugar

Directions:

Take the Nilla wafers and melted butter in a bowl and crush it thoroughly. Use the cooking spray to grease the pan and add mixture to it. Crush the blueberries using a blender into a puree. Add lemon juice, zest and gelatin to it and let it rest for 5-10 minutes until it blooms.

In a separate bowl, place the chocolate chips. Place the cream cup on simmer, add the gelatin and blueberry puree to it and pour the mixture on white chocolate, stir it till it gets mixed. Refrigerate it for 10-15 minutes.

Put the remaining 2 cups of cream and sugar in a bowl and beat it properly.

Add and stir 1/4 cup of the cream into the chocolate mixture and pour the remaining on the prepared crust.

Refrigerate it for 4 hours until it becomes firm.

Toss the blueberries into the mixture of sugar and lemon juice and use them to garnish the cake.
